Simple & Healthy Cinnamon Clouds

I've recently started on a new journey: to be ready to compete on stage for an NPC (National Physic Committee) physique competition this coming October!  Oh my!

I stick to a very specific meal plan and exercise plan, prescribed by a super awesome coach who knows what it takes to compete, and be ready physically and mentally. Following this new and improved meal plan, I have given up most carbs, all the yummy sugar I could ever want, and frivolous, mindless eating.  I eat to fuel my body, but I still need to enjoy it!

The other day I wanted dessert.  Like, real bad. And I still had one meal left. What to do!?

One of my favorite breakfasts lately is egg white horchata.  I NEVER thought I would be the type of person to drink egg whites - gloppy, goopy, sticky. Eew. Pasteurized liquid egg whites are liquid, and flavorless.

However, add stevia and cinnamon - viola! Egg White Horchata!

I thought I would adopt this to a baked dessert, and see how it worked.


I had started drinking egg whites because cooked egg whites without all sorts of things added is just not that fun, folks! I wasn't sure I would like them baked, but I had to get that last meal in, and wanted something new. By the way, I ate it all, and was super sad when they were all gone.

Egg White Cinnamon Clouds
(makes 20 clouds)

1 cup egg whites (I used liquid egg whites)
2 packettes stevia (approx. 1/2 tablespoon)
Cinnamon to taste (1/2 to 1 tablespoon)

Preheat oven to 350*

Use non stick cookie sheet, or lightly oil foil in cookie sheet. I went super light, not wanting to add fat.

Whip all ingredients with electric mixer until peaks form. This takes forever, so have patience!

Spoon clouds onto cookie sheet. I stacked 2 spoonfuls per cloud, leaving a 1 inch space between clouds. I was able to make 20 clouds.

Bake for 12-15 minutes. Clouds should be golden on top.

Remove from cookie sheet, stack on plate, devour. If you're like me there is no sharing!

25g protein
8g carbs
4g fiber
0g sugar or fat

These clouds of happiness and healthiness are a bit crunchy on the outside (I love that part!), and pillowy on the inside, almost creamy.

With these limited ingredients, some of them deflate when taken out of the heat. I sprinkle the top with a bit more cinnamon for visual effect, and as I said above, devour!

  2. Wow, these look good! I can't eat egg whites, so I wonder if this would work with flax eggs? The consistency will probably be different, but all that matters is that they taste good!

    1. This might work with that liquid that’s in canned chickpeas.
