Quick Jalapeno Cilantro Chicken Alfredo



We all know that cooking for picky eaters is both hard and annoying at times! My girls are pretty good at eating most things I make, but always seem to pick around the things that they do not like. I have tried and tested many recipes and come to find only a few that have stuck. This is one of them!

(NOTE: I make a batch without the jalapenos for them!!)

Your typical Chicken Alfredo is sauce, noodles and some grilled chicken. Mine incorporates a few other flavor items that are both healthy and taste good.

When I was pregnant with my first daughter, I came up with this recipe just by throwing things in the pan and well, thank God I did, because my husband loves it as much as I do!

Quick Jalapeno Cilantro Chicken Alfredo

Prep Time: 15 minutes
Cook Time: 25 minutes

Ingredients:
2 Boneless Skinless Chicken Breasts, cubed
Jar of Bertolli Alfredo Sauce (or any kind that you prefer)
2-3 cloves garlic, minced
1 fresh Jalapeno, diced into small chunks (remove seeds)
1/2 Onion, diced
Handful of cilantro, chopped
1 Bell Peppers, cut into strips (I like Orange Bells for color)
A handful of fresh Spinach
Salt and Pepper to taste

Start by sauteeing up some jalapenos, onions, and bell peppers in a little dash of oil until soft. Add garlic, and saute, watching so it doesn't burn.

Throw in the cubed chicken, and saute until it is cooked thoroughly.

Once the chicken is cooked, throw in a handful of cilantro and spinach and mix it all in.
Add in an entire bottle of Bertolli Alfredo Sauce right into the pan with all the chicken and veggies. Cook gently until heated through.

NOTE: the sauce will turn a brownish color from all the other ingredients!

Throw this on top of some noodles of your choice and you are set!
