We try to switch up our protein throughout the week. We always have beef, some kind of chicken, some kind of seafood and maybe Italian or German pork sausages.
We've managed to find a plethora of was to prepare most of these, except chicken. I know that seems strange as there is so many options, but I'm pretty picky.
So chicken night typically means white chicken chili - which is amazing, but there are so many leftovers that there are just a few days of finishing one batch before we're making more.
Here
is what we came up with recently as an alternative - Buffalo Chicken Sliders!
Ingredients
3-4
boneless skinless chicken breasts
(2.5
cups when shredded)
1
cup Ranch dressing
½
cup Franks buffalo Sauce
2
cups shredded Cheddar cheese
1
tablespoon melted butter
package
Hawaiian sweet rolls
I like to season the chicken with salt, pepper, and sage and saute for a few minutes before cooking in the instant pot until done. Let the chicken cool enough to handle, and shred.
In
a large bowl, mix ranch and buffalo sauce until blended. Add cooked
and shredded chicken and stir until coated.
Using
a large bread knife, cut top of rolls off of Hawaiian bread sheet. (This can of course be done individually if too difficult as a whole.)
Lay
bottom of rolls together in a rectangle pan. Cover with chicken mixture, spreading evenly. Top chicken mixture with shredded cheddar cheese, evenly.
Carefully
place tops of rolls back on, and brush
melted butter all over outside of rolls.
Bake
at 350 for 15 minutes.
Serve with salad or chips - or go classic and offer celery and carrot sticks with Ranch or Bleu Cheese dressing!
Making these got me to thinking about how perfect they'd be to serve at a gathering - we often host board game nights, so I have a good list of foods I like to serve.
With this being Super Bowl weekend, I thought maybe people might be looking for some simple ideas! Here are a few recipes we've shared here at RCHReviews in the past:

Great idea Jackie and I bet they don't last long at all. We don't watch the Super Bowl here in South Africa but I'm guessing it's as big occasion as when the Springboks play the All Blacks and having a whole bunch of delicious treats just makes those games so much more fun

I do like to cook in batches as well since I have to prep my husband's lunch box for the week and different types of food goes a long way for both my boys.
