I am not even kidding - I love potatoes in just about every form possible. When we go low carb, I don't dream of sugar or bread. I dream of potatoes!
This month's Foodie Extravaganza is celebrating National Potato Lovers Day (Feb 8) this month and several bloggers are getting together to share fabulous potato recipes today. You'll find links to their recipes below, but meanwhile, let me tell you about mine.
We got a waffle maker for Christmas and after making waffles, I wanted to experiment with waffling other things and what immediately came to mind was hash browns.
I adore hash browns and have strong opinions about them.
They have to have plenty of crispy surfaces and should be soft and creamy inside.
I much prefer them made with loose potato shreds rather than those pre-made hash brown patties you can buy.
I know which restaurants make them right and which don't, and I know that I am purely terrible at getting them right when I make them myself.
But waffled? This should make it a bit more foolproof right? Right!!
Heavily inspired by this recipe from Dash of Savory, these were delicious and just right for a late morning Sunday breakfast, along with bacon and over easy fried eggs.
Waffled Hash Browns
Serves 6
1 28oz bag frozen shredded potatoes, thawed and dried
3 eggs
1/3 cup half & half
1 cup shredded Cheddar
2 Tblsp. minced chives
1/2 tsp. paprika
Salt & Freshly Ground Pepper to taste
Cooking spray or oil
Combine all in a large bowl and mix thoroughly to combine. Heat up waffle maker.
Thoroughly spray or brush on oil on both sides of waffle maker before making each waffle.
Using a large spoon or ladle, scoop about one cup of hash brown mix onto hot waffle maker, spreading to almost cover (this isn't batter so it won't spread the way waffles would).
Close waffle machine and cook for about 8 minutes. Remove to a dish kept warm in the oven while the rest are being made.
