My husband and I have been trying really hard to lose weight and eat better for most of this year. We followed a pretty strict Ketogenic diet for about 3.5 months that unfortunately failed on vacations and we haven't quite gotten back to it.
However, we've kept a lot of the same mindset and try to be as low-carb as possible without fully giving up carbs again.
So, what is it about any sort of attempt to eat healthier that automatically makes you want a burger? When on Keto, we often did open faced/no bun knife and fork burgers and that was great.
But even still -- where's my McDonalds Big Mac!? In reality, we rarely even eat fast food (living in Germany, it's not easily accessible, thankfully) but now of course, just because we're actively avoiding it, we need it!
So while trying to stick to our goals, but all the while wanting to make love to a Big Mac, the Big Mac Salad was born.
A Big Mac is unique compared to some other fast food burgers because of its copious amounts of lettuce as well as its 'special sauce', so it made the most sense to do it as a salad. Here's what we did:
Yield: Serves 4
Big Mac Salad
A chopped salad inspired by the famous fast food burger, without the bun.
INGREDIENTS:
Salad
- 1 lb ground beef
- 1 tsp salt
- ¼ tsp pepper
- 4 cups thinly shredded lettuce (try a blend of iceberg and Romaine)
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- ½ cup diced dill pickles
- 1 small white onion, diced
"Special Sauce" Dressing
- ½ cup mayonnaise (homemade would be great!)
- 2 tsp yellow mustard
- ½ tablespoon ketchup
- 1 tsp white vinegar
- 1 ½ tbsp sugar or substitute
- ½ tsp smoked paprika
- 2 tbsp diced dill pickles
INSTRUCTIONS:
- Mix dressing ingredients together well, let chill in fridge until about to serve.
- Brown the ground beef in a medium skillet, seasoning with salt and pepper. Break it up into crumbles. Let fully cook, and drain excess fat.
- Combine remaining salad ingredients in a large bowl, including the cooked ground beef.
- Toss with chilled dressing and serve!

Jackie I had no idea you had the recipe for the special sauce. I used to eat Big Macs when I was a kid and love, love that sauce. After all that is what made the burger. I am so happy to have found this. Will be pinning to try for sure.
