Slow Cooked Pork Tenderloin

I recently moved into a tiny apartment. There are things about it that I love; It's very easy to clean. There are things about it that I don't love; I can't cook a proper meal in the galley kitchen without having a fit. My solution to this is to cook many meals in my trusty Crockpot. I love slow cooked food. The ease of preparation, the house smells amazing all day, the flavors become deep and rich. . . I could go on.

Don't be mislead by the "bay leaves". I reuse my spice bottles. It's actually rosemary.

One of my favorite ways to cook a meal is to play a game I call, "What would this taste like?" It's fairly simple. I go through my kitchen and start grabbing ingredients that I think might be good together.


Make a cozy little bed of onions and garlic for your pork.
For this meal, I started with a pork tenderloin. I like to only use what I have on hand for this game, so I started rummaging through the cupboards and pulled out rosemary, thyme, rubbed sage, honey, apple juice, a yellow onion and some garlic. There is something amazing that happens when you pair apples with pork. Its like magic.

I started by chopping my onion in quarters and then slicing it. I spread these out in the bottom of the Crockpot followed by three cloves of garlic, sliced. I placed the pork tenderloin on top of the onions.

In a small bowl, I mixed together my spices with a teaspoon of coarse sea salt and ground pepper. I sprinkled this mixture on top of the pork and then drizzled honey over the top of that.

I added 1 cup of apple juice to the pot, being careful not to dislodge the spices.

I cooked this on high for 2 hours and then on low for 4-5 more. The reason for the long cooking time is that the meat was frozen at the start.

I served this amazing pork with Pioneer Woman's Crash Hot Potatoes and some steamed vegetables. It was delish!

Slow Cooked Pork Tenderloin

1.5lb pork tenderloin
1 medium yellow onion, quartered and sliced
3 cloves garlic, sliced
1 tsp each of rosemary, thyme and sage
1 tsp coarse salt
1/4 tsp ground black pepper
1 cup apple juice
1Tbsp honey

Spray the inside of your Crockpot with non-stick cooking spray or use a liner. Lay the onions and garlic in the bottom of the crock.

Place the pork on top of the onions. Sprinkle the herbs over the top of the pork. Drizzle honey over the herbs. Pour in one cup of apple juice, being careful not to dislodge the herbs. Cook on low for 4 hours if thawed or add 2 hours on high if meat is frozen.


So delicious!!
