Recipe: Chipotle Shrimp Quesadillas




This is an incredibly tasty and quick dinner. It takes around 20 minutes to make but is not for the faint of heart. This is a spicy dish! You can cut the heat by adding only half the can of chipotle peppers. However, I wouldn't suggest going over the one 7 oz. can.  Trust me.

I adapted this recipe from a chipotle chicken recipe that one of our other writers (Lynda, my mother - in - law) used to make all the time. We always just put the chicken on our plate and pick it up with flour tortillas. 

I remember many years ago, my wife's (girlfriend at the time) mom was away for a few days and her dad and I really wanted the Chipotle Chicken. Looking in the pantry, Jackie found a few small 7oz cans as well as some larger 12oz. cans of chipotles in adobo sauce. Not sure what her mom used, she decided one of each should be sufficient

Needless to say, it nearly killed us all. 

Her dad had to stop a few bites in and resort to leftover KFC. I, not wanting to be rude, pushed on...and while it was possibly the tastiest thing I've ever eaten, I lived to regret it the days that followed. So that being said, stick to the single 7oz can. 

I love seafood, so wanting something new, this recipe was born. Its great for a cold day but when my pregnant wife is begging me for them when its 85 degrees out in the Mohave Desert, who am I to argue?


 Chipotle Shrimp Quesadillas

What you’ll need:


1 Pkg large (burrito-sized) flour tortillas
7oz can Chipotle Chiles in Adobo Sauce
1 Pkg frozen jumbo shrimp (pre-cooked or raw)
Butter or olive oil
Grated cheddar cheese
Sour cream, salsa, guacamole, or other toppings to taste


 Chipotle Shrimp filling


Preheat a large frying pan on medium high heat. Pour peppers in blender. Fill empty can approximately 2/3 with water and pour into blender. Blend the mixture until a thin paste is formed. Add butter or oil to skillet. Cook shrimp thoroughly if raw. If cooked just add to pan. Pour pepper sauce over shrimp and heat for 5-7 minutes or until mixture is good and hot. Pour into a bowl and set aside.

Quesadillas  


In a clean frying pan preheat to medium high heat and add oil or butter. Place tortilla in pan and heat until air bubbles start to raise (around 3 minutes or so). Flip the tortilla over. Sprinkle a generous amount of cheese around the entire outside edge of the tortilla. Add the filling to the center of the tortilla inside the circle of cheese. Fold tortilla in half and press around the edges. The cheese will create a nice seal to hold in the filling. Flip the tortilla and allow the other to crisp a little. Repeat this process until you are out of filling or tortillas. Top with sour cream, salsa, or guacamole as desired.

  12. I just made these yesterday! They were really good - spicy, but we love spicy! I used carb balance tortillas (Mission brand) and Fiesta blend cheese. I am always looking for something that will get my husband to eat seafood - these worked! Thanks!

    1. That's great to hear. This is one of my favorite recipes. It took me quite a few tries to get the quesadillas to seal right until I figured out how to use the cheese as the glue to hold them together. This one is also awesome with chicken or beef. Its such a versatile recipe. And the antioxidant properties of peppers are a great benefit! I'm glad you liked them!
